COLORFUL COUSCOUS

Couscous originates from the Maghreb and then spread all over the world. This food is made from steamed grains of wheat semolina. In Italy, it is particularly typical of Sardinia and Sicily. It is very easy to prepare because you just need to bring the water to a boil, which should be the same amount as the couscous itself, and then mix the couscous inside with the lid off for 5 minutes. The water can also be flavored with spices. In this case, I put some turmeric. I really like couscous because you can create a multitude of dishes, and salads complete with all the nutritious and tasty. In this recipe, I used carrots, zucchini, Pak Choi, rocket, and radicchio as vegetables, but you can use the ones you prefer. Pak Choi or Chinese cabbage is grown precisely in Southern China and Southeast Asia. Its flavor is similar to our chard and is very delicate with a final bitter note. It has very few calories and is rich in water, fiber, mineral salts, vitamins A and C.

Ingredients:

  • 80ml water;

  • 80g couscous;

  • Salt to taste.;

  • turmeric to taste;

  • 1/2 red onion;

  • 1 teaspoon extra virgin olive oil;

  • 1 Pak-Choi (Chinese cabbage);

  • 1 carrot;

  • 1 zucchini;

  • 70g drained tuna;

  • 5 capers;

  • Mixed salad (rocket and radicchio).

How to make:

  1. Put the water in a saucepan to boil with salt and turmeric;

  2. Once it reaches a boil, transfer everything to a bowl with the couscous inside, mix well, and put the lid on. Let it rest for 5 minutes;

  3. Finely chop the onion and brown it in the oil for a few seconds. Add the Pak Choi cut into strips, the diced carrot, 1/2 glass of water, and cook for 10 minutes;

  4. Add salt and the zucchini cut into cubes and cook for another 5 minutes;

  5. Put the tuna in a bowl and then add the vegetables, the couscous, the chopped capers, and the mixed salad. Mix all the ingredients and enjoy.
