ZERO CARBOHYDRATED SANDWICHES

The zero carbohydrate sandwiches are made with bamboo fiber, an ingredient rich in fiber, in fact it is widely used in supplements for weight loss. These sandwiches are also suitable for gluten intolerant, as they do not contain any. The xanthan gum used in the recipe is used as a food additive, to bind the ingredients together (especially if they are gluten-free). It is a polysaccharide obtained from the bacterial fermentation of a simple carbon hydrate such as sucrose or glucose.

Ingredients (4 sandwiches):

  • 1 egg;

  • 1 sachet of yeast for savory;

  • 1 teaspoon xanthan gum;

  • 100g bamboo fiber;

  • 160ml water.

Procedimento:

  1. In a bowl, put the bamboo fiber, the yeast and the xanthan gum;

  2. Mix everything then add the egg and mix the ingredients;

  3. Add the water and continue to mix everything, then knead with your hands;

  4. In a baking tray lined with parchment paper, place the 4 rolls that you will form with the dough;

  5. Bake at 200 degrees for 20 minutes;

  6. Once ready, you can stuff them with what you prefer. I stuffed them with 1 slice of bresaola and 2 slices of grilled eggplant.
